CAPACIDAD ANTIOXIDANTE Y COMPUESTOS BIOACTIVOS DE UN FILTRANTE DE CINCO HIERBAS AROMÁTICAS Y ESTEVIOSIDO (Stevia rebaudina B)

摘要

En este trabajo de investigación se estudió la variación de la capacidad antioxidante y compuestos fenólicos de hierbas aromáticas durante el proceso para obtener un filtrante con esteviósido como edulcorante natural y se encontró que las hierbas aromáticas aumentan su capacidad antioxidante reportando en mM Trolox/100 g b.s.: en las etapas de materia prima, secado y molienda respectivamente; la malva olorosa presentó el mayor contenido de capacidad antioxidante 5,354; 35,40 y 36,74. LasHierbas aromáticas aumentan los compuestos fenólicos durante el proceso de obtención del filtrante reportando en mg de ácido gálico/100 g de muestra b.s; en las etapas de materia prima, secado y molienda respectivamente; la menta fue la que presentó el mayor contenido de compuestos fenólicos 5601,42; 6989,91 y 7063,26; la mejor dosificación de esteviósido es aplicando 5% respecto a las hierbas y que fue la mejor formulación del filtrante. El filtrante reporto la siguiente composición físico-química: humedad 5.69%, proteínas 12.79%, grasa 2.39%, carbohidratos 48.3%, cenizas 14.01%, fibra 16.82% compuestos fenólicos 2973.76mg de ácido gálico/100 g de muestra b.s. y capacidad antioxidante 7.34mM Trolox/100 g b.s., el valor de monocapa molecular: 0,073 g de agua/g b.s. correspondiente a una actividad de agua (aw) de 0,219. // In this research the variation of the antioxidant capacities and phenolic compounds of aromatic herbs subjected to a process for the obtention of a teabag containing stevioside as a natural sweetener was carried out. This investigationfound that the aromatic herbs increased their antioxidant capacity which is reported as mM Trolox/100 g b.s.:in the phases of raw material, drying and grinding respectively; tall mallow had the highest content of antioxidant capacity, 5,354; 35,40 and 36,74. The aromatic herbs also increased their phenolic compounds during the process of obtaining a teagbag which is reported as mg of gallic acid/100 g sample b.s.; in the phases of raw material, drying and grinding respectively; mint presented the highest content of phenolic compounds 5601,42; 6989,91 and 7063,26; the best stevioside dosage was of 5% of the herbs and proved to be the best formulation for the teabag. The teabag reported the following physicochemical composition: moisture 5.69%, protein 12.79%, fat 2.39%, carbohydrates 48.3%, ash 14.01%, fibre 16.82%, phenolic compounds 2973.76mg of gallic acid/100 g sample b.s. and antioxidant capacity 7.34mMTrolox/100 g b.s., the value ofmolecularmonolayer: 0.073 g of water/g b.s. corresponding to a water activity (aw) of 0,219.
